The first stage in making the Tiptree ‘Tawny’ Orange Marmalade is to gently simmer the whole oranges, this makes the peel really tender. The oranges are then inspected and prepared by hand. The orange pulp is scooped out, the pips are sieved, and the thick peel is cut. The oranges are then cooked with sugar in small batches using traditional, copper-bottomed pans, and left in a pail to cool overnight. The following day the marmalade is cooked for a second time to caramelise the sugar, this gives it a deep colour and its full bodied flavour.

Tiptree ‘Tawny’ is a full flavoured thick cut Seville orange marmalade. The Seville oranges are cooked with sugar and nothing else.
